This is an easy 8 ingredients recipe that you can chop and drop into your largest soup pot and serves 10! Let them come home the prettiest and best ever meat and vegetable stew your family’s ever enjoyed. Serves 10 huge bowls.
2 Eggplants peeled and diced
2 Jars ( 24 oz) Spaghetti Sauce
4 cups Beef Broth ( can use bullion)
4 cups water
2 small yellow squashs ( do NOT peel) just cube
2 large green peppers diced
1 cup any uncooked pasta ( elbow, orzo etc…)
1 or 2 pounds Ground Beef
Dice up the Eggplants and your Squashes and toss them into your biggest soup pot. Pour two jars of Spaghetti Sauce on top of the veggies and add your beef broth and water also and stir it all together. Add your Diced Green Peppers. Heat to a boil over medium heat, then reduce to low for about 15 minutes.
Brown Ground Beef , drain fat and then add your ground beef to your veggies, stirring well. Then and add your Pasta of choice ( 1 cup) to the pot and cook altogether for 20 minutes more or until the pasta is totally tender.
This stuff just disappears! The Eggplant takes on the Tomato colors and flavors and the Yellow summer squash just taste so good and looks so pretty with the green of the peppers it’s a treat to see and delicious to eat on these cold winter night. Great home cooking…made easy, this is it. Enjoy.
