Sheila’s Onion Soup, so easy and so good on a cold winters day…

My true love Dave found this recipe in an Almanac and we modified it a little but it is truly one of the easiest dishes we’ve ever made for dinner. You’ll find it becomes a winter standard as its so good for those with any kind of congestion. Consider it for what it truly is, natures delicious answer help a person with a cold feel much loved and much better!  

1 LargeWhite Sweet Onion chopped

4 cloves Garlic minced

1/2 stick margarine

4 cups beef broth (from bullion or canned)

2 cups chicken broth (from bullion or canned)

9 slices Italian or French Bread

Parmesan cheese, grated

Mozzarella Cheese grated 

6 ovenproof bowls or crocks

Saute Onions and Garlic in margarine then add your Beef and Chicken broths and boil it all 5 minutes. Take out 6 ovenproof bowls and ladle the soup into them filling them about 3/4 full. Take your 9 pieces of bread and sprinkle them heavy with the Parmesan cheese. Float them on top of your soup bowls using the remaining three pieces of bread torn up to patch up any open spaces on the tops of the soup bowls. Top off with the grated Mozzarella Cheese and Bake @ 375 until Cheese has melted and browned, 20-30 Minutes. Fabulous.
