For a freezy cold night, a hearty Italian Stew…

My Beloved made this last night for dinner and it was wonderful and very good for you too. Lots of Chunky Cut Veggies…

Dave’s Italian Stew

1 pound Italian Sausage

1 cup fresh mushrooms sliced

1 cup Zucchini sliced with skin on

1/3 cup sliced and diced Sweet White Onion

3 cloves Garlic minced

1  Tablespoon Olive Oil

3  Cups Chicken Broth

1 Large Can diced Tomatoes, undrained

1 Teaspoon Basil

1 Packet Sweetener

1/2 Teaspoon Freshly ground black pepper

1/2 cup “Orzo” Uncooked Pasta

2 Tablespoons minced dried Parsley

In large pan brown the Italian Sausage add the crushed Garlic, Zucchini, Mushrooms, Onions and Olive Oil. Cook until the meat is browned then drain the melted fat and oil. Now add the  large can of diced Tomatoes, the 3 cups of Chicken Broth, the Basil and Pepper and the 1 packet of Sweetener. Bring to a boil, stir in 1/2 uncooked Orzo pasta, reduce heat and cover let simmer 15-20  minutes. Top with a little Parsley and serve with fresh crunchy French Bread and reduced calorie butter. The best on a cold winter night.
