On truly HOT days you need a cold fresh relief for dinner…Gazpacho Soup!

On those truly hot days, when you think your forehead is going to just melt off you face and you would do anything to be cool and dry try this…it’s a great cold sweet fresh and spicy soup.

Gazpacho Soup

1 Red Bell Pepper

1 Green Bell Pepper

1 Cucumber

4 Plum Tomatoes

3 Cloves Garlic minced

23 oz Tomato Juice (1/2 large can)

1/4 Cup Wine Vinegar

Juice of 1 Lime

1/4 Cup Olive Oil

1/2 tsp Salt

1 tsp Pepper

1 tbsp Basil

1/4 cup Hot Sauce

1 tsp Sugar

Slice and dice all your veggies teeny tiny, mince that garlic and mash it with the back of the blade to release all its goodness put them in huge bowl add your Tomato Juice  and everything else…you might want to use the hot sauce according to your own taste. I made a double batch of this cool delish soup and during this week when it’s in the 80’s my David can have a cool bowl when he comes home from work. With a cold cut  sandwich it makes a terrific summer meal. He loves fresh veggies!  And I won’t need to look at that stove till the weather breaks, it’s a lot of chopping but it’s worth it because for the rest of the week dinner is done! And this wonderful stuff  just gets better and better in the fridge with the spices working .
