Breakfast Banana Peppers

4-6 Banana Peppers (or you can use green peppers)

1 egg

1/2 cup breadcrumbs

1/2 tsp garlic powder

2 slices colby jack cheese (chopped fine)

3 tablespoons butter

1 tsp vegetable oil

1st rinse and slice banana peppers in half, remove seeds (if using standard green peppers just slice off the sides the “cups” of the pepper).

lightly oil split peppers and set on aluminum foil covered cookie sheet. Place breadcrumbs, and cheese , garlic powder in bowl and mix with fork  crumbling them all together. Melt butter in microwave and mix into bowl with other ingredients. Beat egg and add to bowl. Mix well and then gently stuff the peppers and put them in a 350 degree oven for 20 minutes. Remove and let cool a minute. Serve warm. A wonderful breakfast that can be prepared the night before and popped in the oven when you start the coffee maker. Easy to pack, excellent for lunches also.
