2 giant yams or sweet potatoes
1/2 stick butter
1/3 cup orange juice
1/3 tsp cinnamon
1/3 tsp ginger
1 Tbsp Brown Sugar
1 Tbsp Cinnamon Sugar
dash salt & pepper
Rinse off your Yams or Sweet Potatoes, poke with a fork so they don’t explode in your oven, rub butter on them and then salt and pepper them and place them on your oven rack at 400 degrees till done. (40-50 minutes)
When a fork stuck through them pierces them easily they are done. Remove and let cool a bit and then slice them in half and scrape out the insides( careful not to break the shell of the yam or sweet potato) into a bowl and add all the rest of the ingredients except for the cinnamon sugar. Using your mixer whip this stuff up and then Re-stuff the Yams or Sweet Potatoes with this mixture and sprinkle that Cinnamon Sugar over each half, place on cookie sheet back into the 350 degree oven for 15 minutes. Wonderful, with a big Steak and green salad, but what wouldn’t be?
