Chocolate Cream Puffs (the best!)

Really you can choose any filling, but I always push the “easy button” and pick up some Cool whip or Chocolate flavored Cool Whip. You can fill these with vanilla or chocolate instant pudding also and they’re GREAT. Not a one will be left behind. Set up your ingredients beforehand.

1 cup milk

1/3 cup butter   

1 cup flour

1 tablespoon sugar

little salt (shake or two)

4 eggs

1 can frosting (chocolate)

1st gently bring your milk and butter to a boil.

2nd add in your flour and salt and sugar

3rd KEEP stirring with big wooden spoon until the paste collects together in one big gooeysmooth and glossy ball.

4th remove pan from heat, and beat into the paste your eggs ONE at a time.

5th take a tablespoon and drop them onto your cookie sheet, allow for them to double. 400 degrees for 10 minutes then 350 for 20 more minutes. Do not remove early as they rise fast and need the extra time at a lower temp to completely cook inside. Well worth the time, makes for a golden finish with solid pastry shells to fill. 

6th Let cool COMPLETELY! And then slice off their little tops and gently scoop out remaining pastry strings and fill with your desired filling (chocolate whip cream in my case)

7th Then place your (top removed and foil cover removed) plastic can of frosting into micro for a minute or until runny and drizzle it over your cooled filled puffs. Great way to start a frosty morning. Nothing like the scent of fresh bakery to get them out of bed.
