Hot Sweet and Sour Cabbage Rolls

1 large can tomato sauce

1 small can sauerkraut

1 small can diced tomatoes

1 lb Italian Sausage

1 lb ground beef

1 medium head green cabbage

1 egg

3 pieces bread soaked in milk (torn into large bits and soaked)

2 tsp salt

2 tsp pepper

2 tsp paprika

1/2 tsp Cayenne

1/2 tsp garlic powder

2 tbsp vinegar

3 tbsp brown sugar

1/2 onion diced

1 tsp parsley

tiny bit cinnamon

2 tbsp ketchup

1/2 tsp crushed red pepper

1st  Core and put into large pot your head of cabbage bring to boil and pull leaves off with tongs as they soften. OR as my brother does, put the entire cabbage in the freezer the day before and when it thaws out the leaves will be wilted enough to wrap your rolls.

2nd In Large Bowl, make meat mixture; add meats, egg, drained and squished bread pieces, salt ,pepper, paprika, onion, cinnamon, cayanne, garlic.

3rd  Pour into another bowl tomato sauce and add vinegar, brown sugar, ketchup, crushed red pepper, parsley.  

4th Roll your rolls; take a cabbage leaf and cut out the spine and use each half to roll about 4-6 tablespoons full of meat mixture into the cabbage leaf. Roll your leaves until meat mixture is used up and set aside for next step.

5th Into a large baking pan put down a light layer of sauerkraut and pour a little of your tomato sauce mixture over and mess it around, and lay in your rows of cabbage rolls. Top each layer of rolls with more Sauerkraut and tomato sauce mixture mushed around. Cover and Bake 375 1 to 1  1/2 hours. Terrific with Mashed Potatoes (use instant after all this!) Recipe can be doubled or tripled.
