Cheesecake Pumpkin Roll

3/4 cup flour

3 eggs

1 cup sugar

1 tsp salt

1 tsp baking soda

1/2 tsp cinnamon

2/3 cup of canned pumpkin

In separate bowl mix filling for later use

Filling; 1 (8 oz)  pkg cream cheese, 2 tbsp butter, 1 cup powdered sugar, 1/2 tsp vanilla, 1 1/2 tsp lemon juice.

1st. Preheat oven and Spray bottom and side of cookie sheet with Baking spray. Mix Dough ingredients together and pour onto cookie sheet, bake 350 degrees , 7 to 12 minutes till it springs back upon touch.

2nd. Flip onto dusted with powdered sugar clean kitchen towel and roll and place on bottom shelf of refrigerator to cool.

3rd. Mix Filling ingredients up and when rolls are cooled take out unroll slowly and frost inside of roll and reroll and wrap in aluminum or plastic and replace back into refrigerator or freezer. With that little bit of lemon juice in the filling taste a little like cheesecake. Delish.
